- 8 ounces cavatappi pasta or 8 ounces macaroni
- 1⁄4 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 1⁄2 cup shallot, finely chopped
- 2 tablespoons all-purpose flour
- 1 1⁄4 cups dry white wine
- 2⁄3 cup half-and-half
- 7 ounces gruyere, grated
- 3 ounces gouda cheese, grated
- 1 tablespoon Dijon mustard
- 1⁄8 teaspoon cayenne
- 1⁄8 teaspoon nutmeg

TOPPING
- 1 1⁄2 tablespoons butter
- 1⁄4 teaspoon kosher salt
- 4 ounces sourdough bread, torn into large pieces
directions
- Boil pasta according to package directions.
- In frying pan, saute shallots in butter until light golden.
- Sprinkle with flour- stirring til well mixed.
- Add wine and stir.
- Add cream and stir well.
- Add mustard, cayenne and nutmeg.
- Sprinkle in cheese, one large handful at a time.
- Stir in cooked pasta and mix well.
- Pour into a 2-qt baking dish.
- TOPPING- in food processor, put in all ingredients and pulse til well mixed.
- Sprinkle on top of pasta.
- Bake at 400 degrees 20 minutes- til topping is brown and cheese is bubbling.

<p>I am a mother of 17yr-15yr-12yr old children. I work 3 days a week outside of the home as a pharmacist. Dinner is always a sore subject for me, because there is never time to make it, and the kids don't eat it anyway. My goal this year is to just forget the kids and make what I think my husband and I want, and then they'll have to try new foods out of desperation! <br />I've noticed that I tend to give 4 stars as my top score when reviewing a recipe. Am I waiting for that once in a lifetime, mind altering taste? Or am I just too picky? Oh well.....</p>
