A Greek yogurt dip that tastes great and is very easy to make. It can be used as a dip centerpiece for a platter or spread on bread for a great flavor infusion.
- 1 small cucumber
- 2 garlic cloves
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 1⁄2 cups yogurt
- spring coriander
- Cut the cucumber into small cubes about 1/3 of an inch.
- Crush the garlic by pressing on it with the side of your knife and mince it finely.
- Mix with all the other ingredients in a bowl and serve fresh, garnished with the coriander.
