Two - Tomato Salad

"For all tomato lovers (like me!)."

• Serves: 4-6

ingredients

• Dressing

• 1 cup tomato juice
• 1⁄4 cup red wine vinegar
• 1 tablespoon extra virgin olive oil
• 1 garlic clove, minced
• 1⁄4 teaspoon red pepper flakes
• salt and pepper

• Salad

• 2 cups red grape tomatoes or 2 cups cherry tomatoes, halved
• 1 cup cucumber, chopped
• 1 yellow bell pepper, medium, chopped
• 1⁄3 cup green onion, chopped
• 1⁄3 cup fresh cilantro or 1/3 cup basil, chopped
• 1 cup small shell pasta, cooked

directions

1. Whisk all the dressing ingredients together and set aside.
2. Gently toss salad with dressing, allow to set for 30 minute.
3. Serve.
