Dressing
- 1 cup tomato juice
- 1⁄4 cup red wine vinegar
- 1 tablespoon extra virgin olive oil
- 1 garlic clove, minced
- 1⁄4 teaspoon red pepper flakes
- salt and pepper

Salad
- 2 cups red grape tomatoes or 2 cups cherry tomatoes, halved
- 1 cup cucumber, chopped
- 1 yellow bell pepper, medium, chopped
- 1⁄3 cup green onion, chopped
- 1⁄3 cup fresh cilantro or 1/3 cup basil, chopped
- 1 cup small shell pasta, cooked
directions
- Whisk all the dressing ingredients together and set aside.
- Gently toss salad with dressing, allow to set for 30 minute.
- Serve.

<p>Cooking is a form of art for me and I love to use it to express myself. It gives me a great joy to prepare meals for the people I care about.
