Two-Step Whole Wheat Pumpkin Bars

"No refined flour or sugar :) These easy, yummy bars are not too sweet, so I recommend frosting them with cream cheese frosting. This was one of the very first things I learned to bake!"

  • Combine all ingredients in bowl and mix well.
  • Bake in greased 9x13 baking pan for 25-30 minutes at 350 degrees; cool on wire rack.

  1. Excellent! I cut the oil in half and replaced it with applesauce, per another reviewer's suggestion. I also added a pinch of sea salt. To sweeten it a bit, I added about 1/2 cup of semi-sweet chocolate chips! No need for icing here! ;) Using the recommended 9X13 pan created very thin bars, though still surprisingly moist! Since the consistency is more cake-like, I plan to use a 7X11 pan next time. Definitely plan to make these again!
     
  2. I made these yesterday, and they are half gone! So moist and yummy, definitely will make again.<br/>I used coconut oil and King Arthur White Whole Wheat Flour... instead of nuts I put in dried cranberries and added 1/4 C of white chocolate chips for fun, no icing.
     
  3. We like these! I upped the cinnamon to a full tsp because I love spice. Next time I will add raisins. Just that little pop of sweetness in them will make them 5-star for us. Thank you for a healthy, low-sugar, whole wheat recipe!
     
  4. These were even better than I'd hoped. I did change a few things. I used 1/4 cup oil and added another 1/4 cup applesauce. I didn't have enough honey so used about 1/4 sugar and then added about 2 -3 TBS honey. I used chopped pecans and some dried cranberries too. To me, they were plenty sweet without frosting and i might even cut the sugar down more next time. Great for breakfast.
     
  5. My guy wanted me to make him something with whole wheat flour and I had a can of pumpkin so I made these for him - he LOVES them! Of course he has to smother them with cream cheese frosting! They are good that way but I thought they were tasty plain!

  1. These bars are exactly what I was looking for! I'm trying to cut down on refined flour and sugar. I used coconut oil. I cut the amount of oil in half, and added more pumpkin to compensate for that. I also replaced 1/3 of the flour with oat bran to up the fiber a little (I'm undecided on whether or not this was a good thing to do, since it turned out slightly "grainy"). I added a little salt and allspice too. You're right, they are yummy and easy! Thanks!
