Two-Step Whole Wheat Pumpkin Bars

No refined flour or sugar :) These easy, yummy bars are not too sweet, so I recommend frosting them with cream cheese frosting. This was one of the very first things I learned to bake!

  1. Combine all ingredients in bowl and mix well.
  2. Bake in greased 9x13 baking pan for 25-30 minutes at 350 degrees; cool on wire rack.

Excellent! I cut the oil in half and replaced it with applesauce, per another reviewer's suggestion. I also added a pinch of sea salt. To sweeten it a bit, I added about 1/2 cup of semi-sweet chocolate chips! No need for icing here! ;) Using the recommended 9X13 pan created very thin bars, though still surprisingly moist! Since the consistency is more cake-like, I plan to use a 7X11 pan next time. Definitely plan to make these again!

I made these yesterday, and they are half gone! So moist and yummy, definitely will make again.
I used coconut oil and King Arthur White Whole Wheat Flour... instead of nuts I put in dried cranberries and added 1/4 C of white chocolate chips for fun, no icing.

We like these! I upped the cinnamon to a full tsp because I love spice. Next time I will add raisins. Just that little pop of sweetness in them will make them 5-star for us. Thank you for a healthy, low-sugar, whole wheat recipe!
