Two-Step Whole Wheat Pumpkin Bars

No refined flour or sugar :) These easy, yummy bars are not too sweet, so I recommend frosting them with cream cheese frosting. This was one of the very first things I learned to bake!

Excellent! I cut the oil in half and replaced it with applesauce, per another reviewer's suggestion. I also added a pinch of sea salt. To sweeten it a bit, I added about 1/2 cup of semi-sweet chocolate chips! No need for icing here! ;) Using the recommended 9X13 pan created very thin bars, though still surprisingly moist! Since the consistency is more cake-like, I plan to use a 7X11 pan next time. Definitely plan to make these again!

  1. Combine all ingredients in bowl and mix well.
  2. Bake in greased 9x13 baking pan for 25-30 minutes at 350 degrees; cool on wire rack.
