Two Ingredient Zucchini Soup

This was made up one day when I had lots of zucchinis - it is very easy and tastes really good!! What's more it's low fat, low calorie and you wouldn't know!

Ingredients Nutrition

  • 1 packet chicken noodle soup mix
  • 4 zucchini, chopped

Directions

  1. Place soup mix, zucchini and one litre of water into a pan.
  2. Bring to the boil.
  3. Simmer until zucchini are cooked and soft (approx 15minutes).
  4. Blitz with a hand blender or food processor.
  5. Enjoy.

Easy, lowfat, and tasty! I added 2 large green onions some celery leaves and 1/2 tsp marjoram. The broth was had a nice veggie flavor when done, but I like chicken soup... so I added a boullion cube @ the last minute. I also did not blitz my soup. Thanks a lot for this gem!!!

This is a very comforting soup when you don't feel real good. I didn't "blitz" mine because I wanted something to bite into. It's very easy to make. I will be making this again. Thanks for the recipe.
