Like the treats you get from Mexican street vendors. Super addicting! From "Fresh Mexico" cookbook.
- Mix together the coconut and sweetened condensed milk.
- Spread onto a baking pan lined with a silicone baking mat (or spray the pan heavily with non-stick spray).
- Bake for 20 minutes in a 350 degree Fahrenheit oven.
- Remove and let cool for 10 minutes.
- Break apart and enjoy!
This is definitely more sugar than I'm used to handling, but in small doses, this bark it is not only tolerable but absolutely delicious, but then, I do like coconut! My sweet tooth thanks you for this great treat!
