WOW is all I can say. I made these in a pinch because I did not have time for the oven. TZehya re great! I did crisp up in the oven for about 15 minutes, the last 5 I added shredded cheddar cheese to top off. I plan to make a huge bag and went and bout a 15 lb. pag of king size russetts to make them with. Thank you for a great recipe.
These were very tasty! I had trouble scooping out the potatoes, the skins mostly fell apart. I think that I could have waited a bit longer for them to cool and that may have helped. I left out the salt and pepper so each person could add to their own taste. I would like to try them mixing cheddar and bacon bits right into the potato. This was a quick and tasty side dish. Thanks!
I made these, tonight, thinking I was making up this recipe, but then I found yours! I used 4 T. butter, milk (in place of the cream cheese), and I used bacon bits, green onions, and grated cheddar. My son LOVES twice baked potatoes, but they're usually so time consuming, when you have to bake potatoes for an hour, before stuffing and rebaking them! This is fast, easy, and delicious! Great minds, huh? Thanks!
I made these today and they were delicious. I did stir in some fresh grated parmesan cheese and a few green onions. I sprinkled the top lightly with paprika. We ate half and I'm freezing the other half. As you can see from the photo instead of spooning mine back into the potato skins I put them in au gratin dishes.
