Twice Baked Potatoes

"Easy and good. Feel free to add any ingredients or spice that you like. I like to make extras, freeze wrapped in foil and add the cheeses later when potatoes are thawed and reheated."

  • Preheat oven to 350°F.
  • Clean and scrub baking potatoes.
  • Pierce skin with a fork once or twice.
  • Bake at 350°F 1 hour or until tender.
  • Let potatoes cool slightly.
  • Cut baked potatoes in half and scoop out within 1/4 inch of edge.
  • Mash with milk, green onions, s&p, and butter.
  • Stuff shells with mashed potato.
  • Sprinkle tops with cheeses (and bacon if used).
  • Place on a baking sheet and bake at 350° for 15 minutes or until cheese is melted.
  • Serve with sour cream.

  1. SIMPLY MARVELOUS! Company's coming...NUTZ! Decided on an easy meal, grilled rib eye steaks, tossed salad/seasoned oil/vinegar dressing and these marvelous twice baked potatoes with a delicious cabernet sauvignon. Irish Coffee's for dessert. We all had great fun, wonderful company and tasty food...what more could you ask for? The first time I followed the recipe to the letter...received WILD raves. The second time (for company) I sauteed minced elephant garlic in the butter and used sour cream instead of the milk...once again, many WILD raves and hollers for seconds! Thanks for sharing.
     
  2. Barbara, you did it...these were wonderful! I didn't have romano or parmesean cheese so I used cheddar and jack together and it was great. I used alot of fresh cooked bacon in and on top of the mixture. Thanks for posting this yesterday when I asked for recipes...its a keeper!
     
  3. This recipe is soooooo good! It makes a really nice presentation (you can pipe the mixture into the potatoes too!). i also added a bit of garlic and soour cream. yummm yumm!! simple- but looks like you spent hours! thanks for sharing the recipe!
     
  4. These are fabulous! The mashed potato inside a nice, crispy baked shell makes for a great side dish. I especially liked the green onions mixed in with the filling. I'll definitely make this again.
     
  5. These are just wonderful! Didn't have any bacon, so I threw some "bacos" into the mashed mixture and the second baking softened them perfectly. Thank you for a wonderful recipie. The leftovers are in the freezer and will be gone shortly!

  1. This went well with steak and spinach salad. This is just the way I remember from my childhood. I substituted about 3/4 cup of sour cream for the milk. This turned out delicious and I can't wait to make it again.
     
  2. These potatoes were good. I wouldn't say outstanding, but definitely one I will try again. I used sour cream instead of the milk and also added a little garlic. I added the crisped bacon on top. Next time I will add a little more garlic. Thanks so much for the recipe!
     
  3. DELICIOUS! And even better the next day, reheated in the oven for 10-12 minutes. I used Sour Cream in place of the milk. Ready to make them again!
     
  4. I bought yucan gold potatoes instead of baking potatoes. The skin was too thin to hold the filling, so I mashed all the ingrediants together. I put them in a souffle dish and baked them. Rave reviews, thanks for the post!
     
  5. Ive tried several twice-baked potato recipes, and this is by far my favorite! I make a big batch every couple of months and freeze them so Im sure to have them always on hand. I usually mix the cheeses into the mashed potatoes (saving a little to sprinkle on top) and use sour cream instead of milk. DH loves them as a side dish and I can turn one into a meal by itself.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
