Twice Baked Jalapeno Ham Potatoes

4 potatoes
ingredients
- 4 large baked potatoes (baked at 350 for 1 1/2 hours)
- 2 tablespoons margarine
- 1⁄2 cup of diced ham
- 1⁄2 cup jalapeno jack cheese (shredded)
- 1 (8 ounce) package low-fat sour cream
- 1⁄2 teaspoon garlic salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup milk (optional)
- 1 (4 ounce) can of chopped green chilies (drained) (optional)
directions
- Scoop out inside of potato, leaving a shell.
- Mix remaining ingredients together,except cheese.
- You may add green chilies if you like.
- If potato mixture is too thick, you may add milk.
- Fill shell with potato mixture.
- Sprinkle with cheese and bake at 350°F for 10 minutes until cheese is melted.
- Serve!

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
