Twice Baked Caesar Potatoes

The roasted garlic dressing gives these potatoes a wonderful flavour and creaminess

  1. Bake potatoes in 400 degree oven until tender (45-60 minutes).
  2. Cook bacon until crisp-pat dry and crumble.
  3. Drain almost all fat from bacon pan- add onion and cook until soft.
  4. Cut baked potatoes in half.
  5. Scoop out potatoes leaving 1/4" shell.
  6. Mash potatoes until smooth and mix in dressing, cheese, bacon and onion.
  7. Spoon mixture back into potato skins.
  8. Bake in oven at 350 until heated through.
  9. Broil for 2-3 minutes to brown lightly.

Very very good, and simple! MY DH loves baked potatoes any way and he really enjoyed this! I could not find (betweeen 3 grocery stores) the roasted garlic caesar dressing so I ended up with creamy caesar and threw in a tad of monced garlic, which worked out great!

These were SO good! We served these at a small dinner party and they were a huge hit. I would totally make them again. Yummy!

I've got to admit, this was my first time trying caesar dressing and I loved it. I also couldn't find the roasted garlic caesar, so used the creamy caesar dressing and added garlic. The dressing added a wonderful taste to the potatoes, no more mashing the potatoes with milk and butter for me. This is going to be the recipe that I use for twice baked potatoes from now on. Thanks a bunch for sharing this recipe!
