This frozen dessert's a breeze and great to have for drop-ins :) Freeze time listed in cook time.
- 1 pint vanilla ice cream, softened
- 1 (16 ounce) can fruit cocktail, well drained
- 1⁄2 cup crumbled macaroons
- 1⁄3 cup chopped pecans, toasted
- 1⁄3 cup peach brandy or 1⁄3 cup peach schnapps
- Line 12 cup muffin tin with paper liners.
- In a large bowl combine all ingredients and stir until well blended.
- Spoon evenly into paper liners.
- Cover with plastic wrap.
- Freeze 3 hours.
- Can be made ahead and frozen for 1 week.
