this recipe is a sauceless chicken recipe with great taste and flavor...i used dried rosemary leaves which i soaked for an hour in the olive oil...then, i followed the balance of the recipe...the finished product had a browned surface and a little crispness to the tongue with a nice moistness to the chicken...very tasty and easy.

This was just lovely - and I took your advice and used top quality olive oil. Getting the rosemary was the hard part - walking across a muddy lawn in heels during a storm is not to be recommended (had no choice though, it was either that or bare feet & I still had to drive home) but it was worth it, it wouldn't have been the same. Thanks for posting, Los Jefes forever!

Excellent Recipe! I had been working around the house all day today and since the weather has cooled down (we are having a heat wave in Victoria), I thought this recipe would be perfect to use the oven. Simple and easy yet very yummy! I used a can of shiitake mushrooms and champagne mushrooms (everyone loves mushrooms in our house) and I used on the bone chicken pieces. Other then this I kept to the recipe and we all had satisfied tummies. Thank you little_wing

Very tasty recipe. I made it a "do ahead" Prepared it up to the last step then popped it in the oven 25 minutes before dinner. I made a mistake with the chicken pieces - I cut a breast into bite size pieces and thought that I had better partially cover the casserole for the final baking removed foil after 15 minutes. The chicken stayed moist. I cut the recipe bake to 1 serving with no problem. I had to use ordinary mushrooms as this is what I had on hand but will make this again when I can find some shiitake Thanks for a lovely dinner little-wing
