Tuscan Tuna Salad

ingredients
- 4 cups lettuce (romaine, red leaf, lettuce and spinach)
- 1 cup tomatoes, coarsely chopped
- 1 (15 -16 ounce) can great northern beans, drained (white kidney beans or navy beans)
- 1 (6 ounce) can tuna in water, drained
- 3 tablespoons red onions, chopped

Dressing
- 1 tablespoon olive oil
- 1 tablespoon water (or 1 tbsp olive oil, I use water to cut down on fat)
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1⁄2 teaspoon dried dill
directions
- Tear lettuce into bite sized pieces; Toss lettuce, tomato, beans, tuna, and onion in a large bowl.
- Whisk together dressing ingredients.
- Toss dressing with salad just until coated; serve immediately.
- 1 serving (based on 4 servings) = 220 cal, 6g fat, 24g carb, 19g pro, 6g fibre, 22% iron.

A nice and different tuna salad. I put a mixture of lettuce, shredded carrot and shredded red cabbage on the bottom and then the mixture of tomatoes, beans, tuna and onions (mixed with the dressing) on top. Very pretty presentation. I did end up adding a bit more vinegar and some Greek seasoning to boost the flavor. I think I would like it better with a balsamic dressing. THANKS for posting.

This was a very nice salad but unfortunately I didnt care for the beans on it as much as I thought I would. Used a bag of romaine salad mix, a pouch of lemon pepper tuna. Instead of the water in the dressing I did use the extra olive oil and a tad bit more of the dijon mustard. Next time I will use green onions instead of the red for a milder onion flavor. My family enjoyed this quite a bit, although I might try to punch up the flavor a touch. I only had romaine on hand but I'll try a mix of greens next time. I doubled the sauce based on other reviews and used about 6 cups of greens and thought there was enough sauce. We don't eat tomatoes so I used red pepper instead. It was simple, inexpensive and quite satisfying with some freshly baked bread on the side.

Thanks for visiting my page! I just graduated with a Bachelor of Science in Human Nutritional Sciences in May 2008 after 5 years of hard work. My hard work paid off as I was accepted to a post graduate dietetic internship which I am currently completing and will be done in June. I have always loved baking and cooking and looking for healthier recipes or ways to make recipes healthier to fit into my lifestyle. I am pesco-vegetarian as I do not want animals to suffer for my consumption.
I also love to be active in individual sports and train year round for triathlon. I am both an active racer and volunteer. The distance I prefer most is the Sprint distance - 750m swim, 20km bike, 5km run. This upcoming race season marks my 16th year of participating in triathlon. I love it just as much, if not more, than I did 16 years ago!! I also have a newfound love for Iyengar yoga.
I have a profound love for animals and the pretty little kitty you see as my icon is my 16 1/2 year old cat Snuggles. Sadly, Snug passed away in March 2006, and is dearly, dearly missed.

The photo below of our two new family additions. Layla (the calico) came home with us from the Humane Society in September and Saxon (black and white) came home two months later as a companion for Layla. Gladly they have become very good pals.
