I'm not rating this recipe because the Jury is still out on it. Made it exactly per recipe and it was intriguing, that's for sure! Savory yet sweet, it had a wonderful aroma to it. I grew up with Fruit Soups and this isn't one of them; I grew up with Savory Soups and this isn't one of them. I really want to make this again, but instead of the pear/apple juice for liquid, I'd like to substitute either a chicken broth or vegetable broth, to swing it far more into the Savory side. I had it with a smoked ham and Brie sandwich and had it been a bit more savory, it would have WOW'D me! After making it, I looked online for the same recipe and found it from the same Moosewood source: with identical ingredients, they have you add 2 cups of vegetable broth in addition to the pear/apple juice. With my remaining soup, I'm going to add that and see how it changes the recipe, as it was a very, very thick soup/porridge without the additional 2 cups of broth. Made for Kittencal's Scandinavian Food Tag Game 2010.

Ingredients Nutrition


  1. Saute onion in butter or oil, until translucent.
  2. Add chopped turnips, apples and thyme.
  3. Saute for 10 minutes, stirring frequently.
  4. Add fruit juice and cook on low heat until turnips are tender.
  5. In a blender, food processor, or using a stick blender, puree until thick and smooth. Add black pepper to taste.
  6. Serve with optional garnishes, if desired.
