This is an amalgamation of a few recipes I found looking for new ways to enjoy chicken. It turned out pretty sensational. Hope you enjoy.
- 4 boneless skinless chicken breasts
- 1 tablespoon turmeric
- 1 teaspoon cayenne
- salt, to taste
- 3 ounces lemon juice
- 2 minced garlic cloves
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon olive oil
- Combine turmeric, cayenne, 2 oz lemon juice, garlic and salt into a marinade, and marinate chicken for 3-4 hours. Make a basting sauce of the soy, sugar, oil and 1 oz of lemon juice.
- Grill the chicken until done, turning and brushing with the basting sauce every 5 minutes or so.
Easy recipe to put together. Had some "bite" to it with the cayenne. I would leave the sugar out of the basting sauce next time, though. Didn't care for the sweet edge. Cooked mine indoors on the Foreman Grill, but will try again during the outdoor grilling season. Made for Fall 2009 My 3 Chefs game.
