Turkish Shortbread (Un Kurabiyesi)

- 1 cup unsalted butter, room temperature
- 1⁄2 cup powdered sugar
- 1 teaspoon vanilla extract or 1 teaspoon vanilla powder
- 2 cups flour
- 1⁄2 teaspoon baking powder

Garnish
- 1⁄2 cup powdered sugar
directions
- Preheat the oven to 375 F.
- Cream the powdered sugar and vanilla with butter, then slowly add the flour and baking powder. Make sure everything's well mixed. Make chestnut sized balls with your hands. Put parchment paper on an oven tray and arrange them on it.
- Bake for about 25 minutes. Immediately sprinkle some powdered sugar on top using a small strainer after you take them out of the oven.

Made as written for CQ #4 & the Happy Campers team - At our house plus among my USA & Icelandic family members, I'm known as the "Cookie Monster". So my CM persona is very happy that I found your recipe. These shortbread cookies are light as air & I esp like that they are not overly sweet as some versions tend to be. My yield was spot-on at 20 cookies & they were very easy to roll, but I do suggest leaving the dough in the fridge to keep it chilled between baking the batches. Lovely recipe Momaphet.
