    Ingredients:

    Serves: 6

    Yield:

    subs

    Units: US | Metric

    • 1 1/2 lbs ground turkey
    • 1/2 cup dry breadcrumbs (I use Panko)
    • 3/4 cup shredded carrot (you can substitute zucchini for some of the carrot)
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon garlic
    • 1 egg
    • 24 ounces marinara sauce
    • 6 whole wheat sub rolls
    • 1 1/2 cups mozzarella cheese

    Directions:

    1. 1
      Preheat oven to 400°.
    2. 2
Combine ground turkey, breadcrumbs, carrots, salt, pepper, garlic, and egg in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.
    3. 3
Once the meat balls are done, transfer them to a pan and heat them up with the marinara sauce. While the meatballs and sauce are heating up, toast the sub rolls in the oven for a few minutes. Once the sauce is heated and the subs are toasted, assemble the meat balls (about 4 or 5 meatballs) on one side of the sub, top with cheese, and put the other half of the sub on the meatballs.
