ingredients
- 1 lb turkey cutlets
- 14 ounces diced tomatoes, can undrained
- 2 cups spinach
- 1 teaspoon fennel seed, chopped
- 4 teaspoons herb cheese spread
- 2 tablespoons olive oil
- salt, pinch
- pepper, pinch
directions
- Pound turkey cutletts
- salt and pepper each side.
- sautee spinach in olive oil until slightly wilted.
- spoon a teaspoon ea of herb cheese in middle of pounded cutletts.
- top with spinach.
- fold turkey over and use tooth pick to hold in place.
- in skillet brown turkey 2 minutes on each side med/high heat.
- add entire can of tomatoes and fennel seeds bring to a boil.
- cover and let simmer for 10 minutes or until turkey is cooked through out.
- place turnovers on plates and spoon tomato sauce over top.
- enjoy!

Very good. My husband & I really liked how sweet the sauce was, plus how it helped the turkey stay moist. Even my kids (4, 3, & 1) ate it & said they would want it for dinner again. Can't beat that! Only change I'll make next time is double the spinach (since it reduces so much when wilted) and add a little more cheese spread to each cutlet.
