"This is a great recipe to put some of that left over turkey to use. You can make it up ahead of time, and its fairly easy. The pimentos are important."

I'm 58 and disabled. I'm not real sure how disabled, since I'm quite sure I'm not useless. I worked in insurance for over 20 years, 12 as the manager, and before that I was a sailor on a nuclear submarine. I had 4 kids, two were inherited when I got married, and two more that are way too much like me. One of my inherited kids has since passed away. I like to read, play golf when I can, and I love to fish. I am generally handy and firmly believe that if I can find a book to tell me how to do something, then I can do it. I have been married to the same woman for the last 30 years, and it looks like we're stuck with each other. I'm a happy person, grateful for what I have, but generally not requiring a lot. Watching my trees grow and my flowers bloom is what I call relaxation. The only thing that makes that experience more enjoyable is to have my dog Dixie near by. I like good cigars, Arturo Fuente 8-5-8 maduro as a matter of fact. I wear a hat like Indiana Jones wears. I like to cook for my wife, but she doesn't always like it. I'm very easy going, almost never pretentious, and I like everybody I meet.
