      Preheat oven to 400 degrees.

      You will need a roasting pan lined with foil and coated with nonstick spray.

      Season turkey tenderloins with salt and pepper, place in the prepared pan.

      In a small bowl, combine the apricot preserves, garlic, mustard and soy sauce. Mix well, spoon some over turkey. Roast 35 to 40 minutes, basting frequently with the sauce, until an instant read thermometer inserted into the thickest part registers at least 160 degrees.

      let turkey rest for 10 minutes before cutting it crosswise into 1/2 inch thick slices.

      This was a very good turkey recipe that I was able to whip up because I had all the ingredients on hand. I served it with mashed sweet potatoes and broccoli and it was a very nice meal. I'll definitely add this to my repertoire. I followed the recipe as written.

      This is an amazing recipe. I used turkey thighs (it was all I could find) so it took longer to cook but the sauce was so good. I used a tablespoon dijion and a tablspoon spicy brown mustard. I'm not a huge mustard so I was worried it would be overpowering but it I could hardly taste the mustard. I also added a little bit thyme to give the turkey a woody flavor. I served it with mashed potatos and asparagus. It made a lovely Sunday dinner (even though I don't ussually cook on Sundays)
