Turkey Taco Soup

"Passed on to me by one of my gf's co-workers. This is really pretty much a chili, but if I call it that, my family would never eat it. I told them it was Turkey Taco Soup, and they gobbled it up. The little one even wants it to be a once-a-week thing."

• Serves: 4

ingredients

• 20 ounces ground turkey
• 1 (28 ounce) can diced tomatoes (undrained, and preferrably petite)
• 1 (15 1/2 ounce) can black beans (undrained)
• 1 (15 1/2 ounce) can kidney beans (undrained)
• 1 small onion, chopped
• 1 (8 ounce) package taco seasoning
• 1 (8 ounce) package ranch dressing mix
• shredded cheddar cheese and tortilla chips, to garnish
• Tabasco sauce, to taste

directions

1. Cook the meat till close to done.
2. Add onion and cook until meat is done and onion is translucent.
3. Add remaining ingredients and simmer till the soup reaches desired thickness.
4. Serve with a garnish of shredded cheddar cheese and tortilla chips, as well as Tabasco sauce, to taste.

This was good, although I would like it better with a few more veggies. I only made one change and that was to put in 2 cans of black beans instead of any kidney beans as we don't really like them. Made for PAC Spring '10
