Turkey Sausage With Escarole and Northern Beans

  1. Heat a large pot over Medium heat. Spray with cooking spray and saute sausage, breaking up with spoon until cooked through.
  2. Remove sausage to bowl.
  3. Reduce heat to medium/low and saute onion until translucent.
  4. Add prosciutto and saute another minute.
  5. Mix in garlic and crushed red pepper.
  6. Add escarole and saute until wilted.
  7. Mix wine with chicken broth and add to pot.
  8. Add beans and sausage and simmer about 10 minutes.
  9. Add black pepper.
  10. Serve with parmesan cheese.
