- 2 teaspoons salt (less if you are not using no-salt-added tomatoes )
- 1 1⁄2 teaspoons cumin
- 1 teaspoon black pepper
- 1⁄2 teaspoon chili powder
- 1 tablespoon olive oil
- 1⁄2 yellow onion, diced
- 1 bell pepper, any color, diced
- 2 garlic cloves, minced
- 1 lb ground turkey
- 1 (15 ounce) can black beans, drained but fluid saved
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can no-salt-added diced tomatoes
- 2 (15 ounce) cans pumpkin
- shredded cheddar cheese (to garnish)
directions
- In a large (4 qt) saute pan, saute onion and bell pepper in olive oil until onions are translucent (4-5 minutes.).
- Add garlic and stir for additional 1 minute.
- Add in ground turkey and continue sautéing until turkey is browned, drain excess oil.
- Stir in tomatoes, pumpkin, beans, corn and all spices and bring to a boil.
- Once boiling reduce heat and simmer for 20 minutes, stirring occasionally.
- If chili seems too dry or thick add retained fluid from black beans in small increments until chili reaches desired consistency.
- Garnish with cheddar cheese and serve.
