I found this recipe in Taste of Home many years ago, and I have been fixing it for years. It is very flexible: you may use other meats instead of turkey (I have used tuna and beef bits), and you may also add a vegetable like peas or mixed vegetables. It's always a hit with everyone, including children!
- 3⁄4 lb turkey breast
- 2 garlic cloves, minced
- 2 tablespoons butter or 2 tablespoons margarine
- 1 1⁄4 cups whipping cream
- 2 tablespoons fresh basil leaves or 2 teaspoons dried basil
- 1⁄4 cup fresh parmesan cheese
- 1 dash pepper
- 3 -4 cups cooked pasta (I use a whole bag)
- Cut turkey into 2 inches x 1/4 inches pieces.
- In a skillet, saute turkey and garlic in butter until turkey is browned and no longer pink, about 6 minutes.
- Add cream, basil, Parmesan and pepper; bring to a boil.
- Reduce heat; simmer for 3 minutes, stirring frequently.
- Stir in pasta and toss to coat. Serve immediately.
I had leftover sliced turkey from church family camp and needed to use it up so I made this for church today. I added frozen peas & carrots and they ate it up. They were even licking the spoon clean to get it all. Thanks for a great recipe.
