I got this meatloaf recipe from Cooking Light and it is a family favorite.

  1. Preheat oven to 350°.
  2. Combine 1/2 cup ketchup, oats, and next 6 ingredients (oats through egg whites) in a large bowl.
  3. Add turkey and stir until blended.
  4. Shape turkey mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray.
  5. Brush 1/4 cup ketchup over meat loaf.
  6. Bake at 350° for 1 hour and 10 minutes.
  7. Let stand 10 minutes before slicing.

try adding about 1/2 cup salsa to the recipe for a little more flavor.

This made a really good dinner. Moist, tender, pretty on the plate, and really good flavor. Also, very easy to prepare. I made a few changes to the recipe, based on another reviwer's comment that this could be bland: doubling the salt and pepper, and adding 1/2 teaspoon garlic powder and a dash of tabasco sauce. Neither DH or I prefer glazed meatloaf, so I omitted the 1/4 cup of ketchup spread over the top. The final change I made was to use 1 whole extra large egg instead of 2 whites, I just don't like to waste anything. This was done in 1 hour, and I very much appreciated that since it was cooking on a raised surface, it was not swimming in grease! Next time, I think I'll cut back on the brown sugar, just out of personal preference, so it's a tad less sweet. We served this with garlic mashed potatoes, for a real "comfort food" kind of meal.

This came out very moist and was quite easy to assemble. My husband commented that overall it was 'okay, but a little bland'. I may try it again the next time meatloaf is requested - perhaps with a few more spices.
