You can make this sandwich with ham or cooked chicken, or make a meatless recipe by leaving out the meat and adding more veggies.
- 1⁄2 cup hummus
- 4 bagels, cut in half
- 4 slices deli cooked turkey
- 1⁄2 cucumber, peeled and sliced
- 2 plum tomatoes, sliced
- 8 leaves spinach
- Spread hummus over both cut sides of the bagel slices.
- Layer remaining ingredients to form a sandwich on top of four of the bagel halves. Cover with remaining bagel halves to form sandwiches.
This was very good! I don't care for tomatoes when out of season, so I skipped it. I used a spicy hummus and also added some pepper jack cheese. The spinach with the hummus was a great combination. I think I would prefer it in a pita over a bagel, but the bagel was very good too. I will be making this often. Made and Reviewed for Photo Tag - Thanks! :)
I made just one bagel for today's lunch. Love all these ingredients and they were so delicious together. I was overly generous with the hummus which tasted just great. And I added some grindings of black pepper to the cucumber and tomato slices. Thanks for sharing this recipe, Annacia. I'll certainly be making it again.
