  • Heat the oil in a large skillet over moderately-high heat until hot but not smoking. Add the ground turkey and using a wooden spoon, break up into crumbles.
  • Cook turkey until done.
  • Season with salt and pepper.
  • Add the stock and scrape up any bits on the bottom of the pan.
  • Bring to a boil, and let simmer until slightly reduced, about 10 minutes.
  • Stir in the spinach and cannelini beans and heat through.
  • Season with salt and pepper, a second time, if desired.
  • 3/4 c cheddar cheese, no fat, see not below.
  • This can be served over noodles or brown rice. I eat it plain and add cheddar cheese to it.
