Turkey Chili-A-Roni

A few modifications of Jyl Steinback’s Beef-a-Roni recipe in her Superfoods cookbook.
Directions:

Heat olive oil.

Sauté green bell pepper for while.

Add yellow onion and sauté for a while.

Add minced garlic and sauté for while.

Add Mexican seasoning and onion flakes and stir.

Add ground turkey thigh, crumble and brown until cooked.

Meanwhile heat salsa with water, chili powder, dried oregano, sugar and pepper over medium heat.

Add cooked ground turkey mixture to salsa mixture and stir.

Add rotini and bring to a boil.

Reduce heat to low, stir, cover and simmer until rotini is cooked stirring periodically.

Remove from heat.

Stir in cheddar cheese.

This chili was made primarily for a neighbor couple for whom I often cook, but I did keep a small portion of it (one cup, actually) for the 2 of us to taste-test! Loved the flavor & the nice change of pace from most of the other chilis I make, so will keep the recipe around to make again, in the near future, just for us here at home! Thanks for sharing the recipe! [Made & reviewed for one of my adoptees in this fall's round of Pick A Chef]
