I found this recipe in Diabetes Forecast magazine. It's an easy, healthy recipe that can be thrown together with ingredients that are always in the house. If I have some leftover cooked veggies, I'll toss those in as well.

  1. Heat chicken broth in a large saucepan to boiling.
  2. Combine turkey, egg, breadcrumbs, Worcestershire sauce, and salt & pepper. Roll into 1 inch meatballs.
  3. Drop into boiling broth, and cook until turkey is cooked through, about 10 minutes.
  4. Add cooked rice. Simmer an additional minute.

*Reviewed during PAC Spring o8* A quick and simple recipe to put together. I used gluten-free breadcrumbs, sauce and broth to make my meal gluten-free suitable. I used left-over rice that made this dinner even quicker to prepare.
