Kids won't realize they're eating their vegetables. Keep napkins handy for this.
- 1 cucumber, diced
- 1 carrot, diced
- 1 teaspoon dill weed
- 1 tablespoon fresh chives, chopped
- 1 cup mayonnaise
- 4 slices bagels, toasted
- 4 -8 lettuce leaves
- 4 -8 slices tomatoes
- 16 slices cooked turkey breast
- Combine cucumber, carrot, dill, chives and mayonnaise together, set aside. Layer bottom halves of bagels with lettuce and tomato; top with 4 slices of turkey. Spoon veggie mixture on top; replace top halves of bagels.
Interesting sandwich. Bread or a bun instead of a bagel might work better; the topping kept squishing out of the hole in the top. other than that, this was a good sandwich.
