This is a great way to use up all those cucumbers during the summer. I love the onions and peppers as well as the pickles themselves. Great to put on your grilled hamburgers! I use my food processor to speed things up. These taste very much like the pickles that my husbands grandmother, Tura Higgins, used to make.

  1. Combine cucumbers, onions & green peppers.
  2. Pour salt over the top and mix thoroughly.
  3. Cover with ice and let stand for 3 hours.
  4. Drain well.
  5. Combine remaining ingredients and pour over cucumber mixture and bring to a boil.
  6. Pour into sterilized jars and process in hot water bath for 10 minutes.
  7. Sweet & Spicy Option: Omit the mustard seed & turmeric. Add 1 teaspoon coarse ground black pepper, 1 teaspoon crushed red pepper flakes &1 teaspoon cayenne to the sugar/vinegar mixture.
