I am always looking for simple, tasty dishes to make for DH's lunch. I whipped this up & he loved it.

Directions

  1. Heat the olive oil in a frying pan. Saute the tuna & next four ingredients for 5 minutes.
  2. Mince the onion, parsley, & olives in a food processor then add to the tuna.
  3. Cook for additional 5 minutes then add the tomato sauce.
  4. Simmer on low heat for 7 minutes.
  5. Serve with thick bread.

This was a little unusual combination of ingredients. It was easy to put together, my husband liked this recipe, served it on pitas. I thought it was a fine recipe, however I did not find it attractive to look at.

We had this for lunch today - served with flatbread. It was very easy, and I had all the ingredients on hand, so it was a good change of pace from a typical tuna lunch. We all enjoyed it but thought there were a lot of strong flavors competing in it, and might reduce the cumin next time.

I made this for my toddler for lunch, and she would have eaten the whole plate had I let her! I used pita bread with it, and it came out great. I did save some for myself to taste after iftar :) Great recipe!
