I have got this wonderful recipe from my good friend. It is bit different with additions of apple chunks and grapes. They give to these salad bit of sweet and refreshing taste. Great for sandwiches or in roll-ups. Make sure you use good quality mayonnaise I use "Best Foods real mayonnaise" brand.
I scaled this back to 1.5 serves and used red salmon as I am not a big fan of tuna, a red eschallot for the onion and as my red grapes were large I quartered them, left the skin on the apple and used dried cranberries and pecans and served on a bed of torn cos lettuce with a dollop of cottage cheese on the side. This is alright. I'm sure better with fresh cranberries, I used dried. I used a Clover Leaf tuna, walnut pieces instead of pecans as that is what I had on hand, red grapes, Hellman's olive oil mayonnaise to be soy free (not GMO free!), sea salt, freshly ground black pepper, plus the rest of the ingredients.
