Very simple and tasty tuna patties with a slight difference, mashed potatoes.

  1. In bowl combine potatoes, tuna, bread crumbs, celery, and pepper.
  2. Add tuna water, if and as needed, to moisten mixture.
  3. In skillet heat oil over medium heat.
  4. Drop about 1/3 cup potato mixture into hot oil; flatten to 1/2-inch patty.
  5. Cook 4 minutes or until browned.
  6. Carefully turn; cook 4 minutes more.
  7. Repeat with remaining mixture.
  8. Serve with tartar sauce if desired.

Pretty darn good and a good way to use up that little bit of leftover mashed potato. I added a bit of garlic to my potatoes, and added chopped scallion and some no-salt seasonings to the mix, just to up the flavor factor. Mr Grumpy ate without complaining much, he did not really like the texture all that much, but he ate all of his dinner. Served with green salad and buttered noodles.

Years ago, my mom made tuna patties and she made potato patties but never together! This is a great combination. i made a quarter recipe using 3 oz envelope albacore tuna, leftover Barefoot Contessa's Mashed Potatoes, green onion instead of celery. YUM! I will make this again! Served with Sour Cream Dill Sauce for a quick, light lunch. Thanks for sharing Annacia. Made for When It's Hot Tag Game.

Made these for hubbys lunch. He said they were ok. I halved the recipe as I was just feeding him. He is a REALLY picky eater, so 3 stars is still pretty good. I added too much of the tuna water and had to add more bread crumbs, but it still formed nice little patties. Thanks
