Tuna Patties

"I decided to make tuna patties the other night, even though I never liked them as a kid. I decided to add some of my favorite ingredients to them to see if they would enhance the flavor of the patties. They were wonderful!!!! :-) ENJOY! )prep time does not include time to boil potato. Sometimes I use leftover mashed potatoes to make these! doesnt hurt!)"

  • Boil potato until soft (as you would for mashed pots.); Mash.
  • Saute chopped onion for 2-3 minutes.
  • add onion to mashed potato.
  • Add cayenne pepper to the mashed potato as well; mix thoroughly.
  • Open can of tuna and drain liquid.
  • Put tuna in a medium bowl.
  • Add potato and stir until mixed through.
  • add egg and mix through again.
  • Add the bread crumbs, parsley, garlic powder, salt, and pepper and mix well with hands (its really the best way to get all of the ingredients mixed VERY well.) If you feel that the mixture is too moist (due to size differences in eggs), you may add some more breadcrumbs (a small amount!), but BE CAREFUL!
  • Do not make mixture too dry as you may encounter breakage while cooking patties!
  • Put olive oil in a nice sized frying pan, and rub olive oil over the pan with cloth; heat on medium-high.
  • Form patties (2-3, depending on how large or small you wish to make them).
  • Put patties in the heated pan and cook 6-8 minutes on each side, depending on how large you made each patty.
  • If you made 3 patties, 6 mins per size should be just fine.
  • Brown nicely on both sides!
  • You may need to add a little more oil while cooking, but do not add too much!
  • Enjoy alone or on a bun.
  • I eat mine on a bun with ketchup!

  1. A Different, but good, way to eat tuna! I omitted the cayenne and used my Paul Prudhomme's Blackened Redfish Seasoning. I also used a little more olive oil to saute the onions. Very easy to prepare. I served this on a bun with lettuce and remoulade sauce. Thanks for a great recipe!
     
  2. We like these a lot!! Served them on a bun with cheese slices,melted on top then tomato slices, lettuce and salsa. They made a nice quick supper with good taste. I was quite generous with the cayenne. We will certainly be making these again!! Thanks for sharing.
     
  3. My family is trying to eat more fish and thought these would be a healthy recipe. Used leftover mashed potatoes (about 1/3 cup). Would make 3 small ones next time and make crispier...definitely will make again.

We made a few adjustments but nothing major......used the 1/3 cup leftover mashed potatoes recommended in another review; used Italian breadcrumbs since we didn't have any parsley; omitted the cayenne pepper and used real butter instead of the olive oil to brown onions & patties. We will be definitely be making these at least once a week!
     
  5. Hubby and I found these a little bland. So I added minced garlic, some oregano, basil, mixed herbs etc, lemon juice and a squeeze of mayonnaise, which made them more tasty. Still a good base to start from.

  4. I too, didn't like eating tuna, but these patties were good. I agree with Stephanie, that you need a little more oil to saute the onions, and I substituted parsley for cilantro. The flavours were just wonderful. The cayenne pepper added a kick.

Since April 2008, I have been a vegetarian. I dont eat creatures...that's the easiest way to put it! :D I still eat a small amount of dairy, but not very much. I have been missing around here for a while, and hope to poke my head in a bit more often from now on... I hope you enjoy my recipes...
