Tuna Noodle Casserole by Jim T J

A composite of about 8 other recipes, keeping all my favorite ingredients and throwing out ingredients I'm not fond of.

• Prep Time: 35 mins
• Cook Time: 25 mins

Ingredients:

Servings: 4

• 1 cup uncooked elbow macaroni
• 3 stalks celery , chopped
• 1 medium onion , diced
• 2 (5 ounce) cans tuna , drained & flaked
• ½ cup mayonnaise
• 1 (10 ½ ounce) can condensed cream of mushroom soup

one of the following 4 veggies

• ¼ cup pimientos or ¼ cup roasted red peppers or ¼ cup green olives, chopped or 8 ounces sweet peas

final garnishes

• ½ cup grated mozzarella cheese
• ½ cup grated cheddar cheese (the sharper the better)
• ¼ cup crushed potato chip

Directions:

1. cook macaroni in salted water until tender (not al-dente).
2. saute celery and onion in butter until tender, but not browned.
3. combine macaroni, celery, onion, tuna, mayo, soup in 2 quart casserole.
4. add in optional veggie and 2/3 of the cheeses - mix well.
5. top with remaining cheese, then crushed chips.
6. bake @ 350 20-25 minutes.
7. enjoy.
