Tuna Bean Salad

This is a fresh, summery salad with lots of protein and very little fat. It's great served over lettuce or as a side dish at a potluck.

I liked this spin on tuna salad. I used grape tomatoes cut into quarters and purple onion, but otherwise followed the recipe. I liked the hint of cumin and mingled flavors. Thank you for sharing the recipe! Made for Pick A Chef 2014.

Directions

  1. In a medium bowl, add the tuna and beans but do not mix.
  2. Coarsely chop the tomatoes, discarding the seeds.
  3. Add the tomatoes, juice from the lemon half, shallot, garlic, olive oil, cumin, and pepper to the tuna and beans, mixing with a rubber spatula to keep the tuna in good-sized chunks.
  4. Chill and enjoy!
