ingredients
- 200 g tuna in olive oil, drained and flaked
- 400 g beans (I used cannellini beans)
- 1 lemon, zest of, grated
- 78.78 ml pitted black olives
- 29.58 ml capers
- 10 cherry tomatoes, halved
- 0 cucumber, chopped into chunks
- 78.78 ml fresh flat leaf parsley, roughly chopped
- 8-10 leaf fresh rocket
- 14.79 ml lemon juice
- 4.92 ml Dijon mustard
- 44.37 ml extra virgin olive oil
- sea salt
- fresh ground black pepper
directions
- Mix together the tuna, beans, lemon zest, olives, capers, tomatoes, cucumber, parsley and rocket leaves.
- Put in to salad bowls.
- To make dressing.
- Pour the lemon juice, mustard, olive oil and salt and pepper into a jar and shake well.
- Pour over the salad just prior to serving.
