- 29.58 ml butter
- 1 small onion, finely chopped
- 4.92 ml mild curry powder
- 4.92 ml paprika
- 59.14 ml plain flour
- 473.18 ml chicken stock
- 473.18 ml milk
- 1 grated lemon, rind of
- 340.19 g can sweetcorn, drained
- 198.44 g can tuna, drained
- 22.18 ml chopped fresh parsley
- 118.29 ml cheddar cheese, to garnish
directions
- Melt butter in large saucepan and add onion.
- Cook gently till soft.
- Stir in curry powder, paprika, and flour.
- Cook for 1 minute, stirring.
- Gradually stir in stock and bring to a boil, stirring constantly.
- Add milk, lemon peel and sweetcorn and simmer for 5 minutes.
- Stir in the tuna, breaking it up into flakes and simmer for a further 5 minutes.
- Sprinkle in parsley and garnish each serving with a little cheddar cheese.
