Great make ahead dish for a hot summer dinner!
- 1 cup cooked rice
- 3 eggs
- 1 cup grated cheese
- 1 (7 ounce) can tuna, drained
- 1 cup milk, scalded
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄4 cup chopped chives
- 1 tomatoes, sliced
- Beat 1 egg and combine with rice. Using back of spoon, press rice mixture to bottom of 9 inch pie plate. Spread 1/2 of cheese and then 1/2 of Tuna over rice. Repeat layers.
- Combine 2 eggs, milk, salt, pepper and chives. Pour over Tuna. Bake in preheated oven at 400 F for 20 minutes.
- Arrange slices of tomato over pie and bake for 5 minutes.
I didn't really enjoy this. It tasted too fishy. I should've added more spices, but I was in a hurry.
