From 365 Low Fat.
- 1 (7 ounce) can tuna in water, drained
- 1 cucumber, peeled seeded and diced
- 1 tablespoon soy sauce
- 1⁄4 cup mayonnaise
- 4 rice cakes, rounds
- Break up tuna and mix with cucumber. Add soy sauce and mayonnaise and mix well.
- Spread 1/4 of the tuna mixture over each rice cake. Serve.
This was good, but it didn't really sing for me. I think adding some rice vinegar would probably bring it up.
This is very quick and easy to make and it tastes great. The only change I made was to serve it on a buttered roll. Loved it!
