Tuna and Cheddar Soup

This sounds so good, but have not tried it yet as I am the only tuna lover in my house. Let me know how it is!

  1. Drain and flake the tuna.
  2. Cook broccoli as directed on package, reserving 1/3 cup of the cooking liquid.
  3. In a large saucepan, melt the butter over low heat. Add onion; cook until onion is tender. Blend in flour until smooth and bubbly.
  4. Stir in seasoned salt, salt, pepper, and nutmeg.
  5. Gradually add milk, stirring constantly. Stir in reserved cooking liquid.
  6. Cook, stirring constantly, until sauce is smooth and thickened.
  7. Stir in the flaked tuna, broccoli, and cheese.
  8. Heat until cheese is melted.

This is good, quick and easy soup! I don't care for onions so used green pepper instead. The broccoli and tuna paired well with the cheesy soup. This made a great inexpensive weeknight meal - thanks for posting the recipe!

Ok, I did make some changes for our needs. I am allergic to fish, so I didn't add the tuna to the soup while cooking. Instead, I flaked it over the bowl for my DH. The broccoli was from a steamer bag, so it was really easy! I left out the salt, and used Lawry's seasoning because it has salt in it already. I also bumped up the pepper, but that is my preference. I also added some chopped scallions just because I really like onions and the color was pretty. So, I had a delicious Broccoli Cheese soup, and DH had a delicious Tuna Cheese Soup.
