What worked here for me was the method of cooking. We can only get frozen scallops and when thawed, I don't care how much you try to dry them, they still retain enough water that you cannot get a decent sear on them. Boiling first takes care of the problem and they are nice and dry when cooled down. Sears beautifully at that point. Not overcooked at all.

  1. Preheat the broiler. Boil 2-3 cups of water in a small pot with salt added. Boil the scallops in the water for 3-4 minutes and drain. Cook the bacon for a couple of minutes on both side, do not over cook, you will not be able to wrap the bacon around the scallop!
  2. When scallops are cool, cut the bacon in half and wrap around scallop.Put a toothpick through one side of the scallop and bacon to hold the bacon around the scallop! Melt butter and brush the scallop and bacon.Season with salt,paprika and ground black pepper.Broil for 5-6 minutes in a baking dish.
  3. Add warm clam juice and serve!
