I found this recipe a few years ago on the net, but can't for the life of me remember where.From www.TopSecretRecipes.com This meatloaf is AWESOME. The sauted veggies are what sets this meatloaf apart. They give the meatloaf a wonderful flavor while keeping things moist. My kids love it!

  1. Preheat oven to 350 degrees.
  2. Over medium heat, sauté the green onion, garlic, green pepper, and carrot in vegetable oil until wilted.
  3. Combine beaten eggs with milk, salt, black pepper, garlic powder, and onion powder in a medium bowl.
  4. Mix bread crumbs and flour into ground chuck and ground pork with your hands. Add egg and milk mixture, sautéed veggies, 1/4 cup ketchup and mix it up using your hands.
  5. Press the mixture into a large loaf pan. Bake for 30 minutes, then spread 1/4 cup of ketchup over the top of the meatloaf and bake it for another hour.
  6. Let it stand for 10 minutes after coming out of the oven.

This is a great dish! Will make a believer even out of people who don't like meatloaf. We like to use mild italian ground sausage vs normal ground pork. This really is an awesome dish.

My friend and fellow faculty member, Mr. Lowe, said "This isn't meatloaf....the is MANNA FROM HEAVEN! He is a bachelor and will beg me to make this "Manna" meatloaf. Thank you so much for sharing it...it is really a ten star recipe!

I have attempted meatloaf several times and never had great results. I made this on July 11th and it was excellent. My picky 5 year old loved it and is asking for left overs for lunch today. We live in Tucson and like a little spice to our food so I used italian hot sausage in place of ground pork to give it a little kick. I also used both red and green bell pepper for color and flavor. Thank you for posting this recipe. We are now lovers of the loaf!
