- 29.58 ml vegetable oil
- 907.18 g beef, Ground
- 2 medium onions, chopped
- 2 garlic cloves, finely chop
- 793.78 g tomatoes, whole
- 340.19 g beer
- 73.94 ml chili powder
- 2 jalapeno chiles, seed & chop
- 14.79 ml cumin
- 9.85 ml paprika
- 4.92 ml sugar
- cayenne pepper (optional)
- cheddar cheese, shredded
- red onion, chopped
- avocado, sliced
directions
- Heat oil in 6-quart saucepan.
- Add ground beef, onions and garlic and saute until meat is browned.
- Stir in next 7 ingredients and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, uncovered, about 45-55 minutes.
- Taste and season with salt, pepper and cayenne pepper, if desired.
- Ladle into bowls.
- Garnish with cheese, onion and avocado, if desired.

This recipe is the first Chili Con Carne I've ever made that didn't have beans. I followed this recipe to the letter except I included the seeds from the jalapeno chilies because I prefer my Chili to have some heat. This has to be the best Chili I've made or tasted. The red onions at the end add a very nice sweet and crunchy texture in your mouth too. The only thing I will do the next time I make this recipe - make a loaf of toasted garlic bread on the side. This one is a keeper for my next Poker night.
