  • Heat oil in 6-quart saucepan.
  • Add ground beef, onions and garlic and saute until meat is browned.
  • Stir in next 7 ingredients and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, uncovered, about 45-55 minutes.
  • Taste and season with salt, pepper and cayenne pepper, if desired.
  • Ladle into bowls.
  • Garnish with cheese, onion and avocado, if desired.

  1. This recipe is the first Chili Con Carne I've ever made that didn't have beans. I followed this recipe to the letter except I included the seeds from the jalapeno chilies because I prefer my Chili to have some heat. This has to be the best Chili I've made or tasted. The red onions at the end add a very nice sweet and crunchy texture in your mouth too. The only thing I will do the next time I make this recipe - make a loaf of toasted garlic bread on the side. This one is a keeper for my next Poker night.
