  1. Heat oil in 6-quart saucepan.
  2. Add ground beef, onions and garlic and saute until meat is browned.
  3. Stir in next 7 ingredients and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, uncovered, about 45-55 minutes.
  4. Taste and season with salt, pepper and cayenne pepper, if desired.
  5. Ladle into bowls.
  6. Garnish with cheese, onion and avocado, if desired.

This recipe is the first Chili Con Carne I've ever made that didn't have beans. I followed this recipe to the letter except I included the seeds from the jalapeno chilies because I prefer my Chili to have some heat. This has to be the best Chili I've made or tasted. The red onions at the end add a very nice sweet and crunchy texture in your mouth too. The only thing I will do the next time I make this recipe - make a loaf of toasted garlic bread on the side. This one is a keeper for my next Poker night.
