      I have waited 3 months to review this cake as I wanted to see how it was after sitting. Excellent, very moist and flavorful, look forward to enjoy this while on camping trips and picnics.

      I made this recently to take on a camping trip. I added a 1/2 c of dried cranberries because I thought it needed a little color. The batter was delicious, but I think that I drained the pineapple a little too aggressively, because the cake was a bit dry. Next time I will add more spices and not drain the pineapple. The batter tasted a lot like carrot cake, so I think you could easily work shredded carrots in to this as a substitution.
