Tropical Passion Rum Punch

This recipe came about one day when we had an interesting juice in the house, a great thirst and a desire for something a little different. This is definitely not for the kids. The name came from the location...we live in Jamaica (Tropical), and the colour...sort of a purple which comes from the pink of the Juice and the blue in the curacao (Purple passion) and the possible outcome.... This is a no fooling around Rum Punch..approach with caution and enjoy. Please note: I used Guava-Pineapple Juice which has a pink colour, but any combination of tropical juices Mango with Pineapple etc. will work. The pineapple seems to be key. I use Appleton's Rum because it is Jamaican and great Rum.

Ingredients:

Servings: 2

• 16 ounces guava pineapple juice
• 2 ½ ounces appleton's special jamaican rum
• 1 ounce appleton's over-proof white rum
• 1 ounce Galliano
• 1 ounce creme de banane
• ½-¾ ounce blue curacao
• 1 slice lime (for garnish) (optional)
• 1 slice pineapple (for garnish) (optional)

Directions:

1. Put all ingredients in a cocktail shaker with ice and shake well.
2. Pour into a tumbler.
3. Add ice and garnish with slices of lime and pineapple if desired.
4. For that tropical touch add a colourful straw and enjoy.
